Crockpot Soup: Lamb Meatball & Bean Soup

List of Ingredients
1 pound ground lamb
1/4 cup chopped onion
1 clove garlic -- minced
1 teaspoon ground cumin
1/2 teaspoon salt
2 cups chicken broth
1 10 ounce package frozen chopped broccoli*
1 15 ounce can diced tomatoes -- drained
1 15 ounce can garbanzo beans or black-eyed peas -- drained
1/2 teaspoon dried thyme leaves -- crushed Salt and
pepper

*Substitute 1 1/2 cups fresh broccoli flowerets for 1 (10-ounce) package frozen chopped broccoli. Combine lamb, onion, garlic, cumin and salt; mix lightly. Shape into 1-inch balls. Brown meatballs in large skillet over medium-high heat, turning occasionally. Place broth, broccoli, tomatoes, beans, thyme and meatballs in slow cooker. Cook on LOW 4 to 5 hours. Season with salt and pepper to taste. Makes 4 to 6 servings.
