    24 chicken wings (about 4 lb.)
    salt and freshly ground pepper
    to taste
    4 c. oil (peanut, corn or vegetable)
    1/4 c. butter or margarine
    1/4 c. hot pepper sauce

    Cut off and discard small bony tips of each wing. Cut through the joint to separate remaining 2 wing sections. Rinse and pat dry. Season with salt and pepper. Heat oil to 375 degrees in deep fryer or heavy pot. Cook in hot fat until crisp and golden, each batch 10 minutes. Or you may bake at 425 degrees for one hour using no oil. Drain on paper towels. Melt the butter in saucepan and stir in hot pepper sauce. Arrange chicken wings on serving platter and pour butter sauce over all. Toss to coat. Serve with celery sticks and Blue cheese dressing.
