    4 Tbsp. butter or margarine
    5 Tbsp. flour
    1 c. milk
    1/2 c. chicken broth
    3 c. ground cooked chicken
    1 tsp. finely chopped onion
    1 tsp. parsley flakes
    salt and pepper to taste
    1 Tbsp. chopped pimento
    (optional)

    Make a very, very thick cream sauce with the butter, flour, milk and broth. Let stand until cold. Add chicken, parsley, onion, salt, pepper and pimento if used. Mold the mixture.

    1 egg
    1 Tbsp. water
    dry bread crumbs
    fat for deep frying

    Mix the egg with water. Dip croquettes in this mixture and roll in bread crumbs. Let stand at least two hours in the refrigerator. Heat fat in deep fryer to 375 degrees. Fry until brown and serve hot with a cream mushroom sauce. Note: Cream of mushroom soup may be used for sauce. These croquettes may be frozen and used later.
