Crab Cheese Fries

4 Tbsp. butter
6 Tbsp. flour
1 1/2 c. milk
salt and pepper
grated nutmeg
4 Tbsp. grated Parmesan cheese
2 c. grated Swiss cheese
1 can crabmeat (16 oz.) drained and flaked
2 egg yolks beaten
2 eggs
4 Tbsp. milk
fresh bread crumbs

Melt the butter in a medium saucepan over medium heat. Stir in flour. Cook, stirring constantly, 2 minutes. Add the 1 1/2 cups milk slowly, stirring constantly. Heat to boiling. Add the salt, pepper and nutmeg to taste. Reduce heat; stir in the cheese until melted. Remove from heat. Mix in the crabmeat and egg yolks. Spread the mixture 1/2-inch thick in a lightly oiled 8-inch square baking pan. Cover with foil. Refrigerate until firm, 3 to 4 hours. Cut the mixture into 1 1/2-inch long rectangles. Beat the 2 eggs with 4 tablespoons milk. Dip the pieces into the egg, then into crumbs. Heat oil in a deep fryer to 375 degrees. Fry in small batches until crisp and golden. Serve hot. Yield: About 40 pieces. Note: Crab cheese fries may be fried ahead. Reheat in oven on foil covered cookie sheet until hot.
