3 large sweet onions
1 c. plain flour
1 tsp. soda
1/2 tsp. salt
1/2 c. cornstarch
oil for frying

Peel and cut onions crosswise in 1/2 inch slices and separate into rings. Soak in ice water for 2 hours. Mix flour, soda, salt and cornstarch in large bowl. Add 1 1/2 cups ice water and whisk until batter is smooth. Refrigerate for 1 hour. Heat 2 inches oil in skillet or deep fryer (375 degrees). Dip onions in batter to coat. Drop one by one into hot oil. Do not crowd. Fry 3 or 4 minutes, turning once, until golden brown. Drain on paper towels. Salt and serve hot.
