Deep Fryer Breaded Crayfish

fresh crayfish tails
butter flavor Crisco
1 dash or more of salt
1 1/2 c. yellow cornmeal (1 1/2 to 2)
1 Tbsp. self-rising flour
1/4 c. buttermilk
1 egg
1/2 c. drinking water Recipe
Soak your crayfish in salt. Prepare your batter by mixing cornmeal, egg, buttermilk and flour; add water. Stir with a fork until moist. If too moist, add more cornmeal, if too dry add more water. Place shortening in deep fryer. Test heat of oil by adding one piece of battered crayfish, if it stays afloat, then add few at a time. Turn them as one side
browns, then brown the other side. Place them on a platter with paper towels to drain the grease. Marinate with lemon juice.
