    2 c. corn cut from cob
    2 eggs separated
    2 Tbsp. minced onion
    1/4 c. all-purpose flour
    2 Tbsp. minced parsley
    1/2 tsp. salt
    1/2 tsp. baking powder
    1 dash pepper or Cajun seasoning
    vegetable oil for deep fryer

    In a deep fryer or heavy 3 quart pot pour oil to a depth of 2 to 3-inches. Heat to 375 degrees. In medium bowl combine corn, egg yolks and onion. In small bowl, mix flour, parsley, salt, baking powder and pepper. Stir into corn mixture. In a small bowl beat egg whites at high speed until stiff, but not dry. Fold into corn mixture. Drop by teaspoonful into hot oil (not too many). Fry for 2 to 3 minutes or until a golden brown, turning once if needed for uniform cooking. Drain on paper towels. Serve immediately.
