if you are a fan of baked mac and cheese you MUST try this recipe.. I know, sounds strange.. but makes such an ooey gooey cheesy crunchy delight.. we tried it and it was heaven! Recommend that you cut the mac and cheese into rectangles that are about 1/2 to 3/4 inch thick. We cooked in deep fryer until dark golden brown and sprinkled on some salt at the end.. I think I like it more this way than fresh out of the oven!!! Be sure that the baked mac and cheese recipe you start with is very very saucy (even making it with less pasta than you may normally).
List of Ingredients
1 cup flour
leftover baked mac and cheese (refrigerated at least overnight)
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne
1 egg beaten with 2 oz. water
1 cup panko bread crumbs
OR finely chopped croutons
Recipe
Oil for deep frying, preheated to 375ºF. Cut refrigerated macaroni and cheese into slices or bite size pieces. Season the flour with salt, pepper and cayenne. Dredge each piece through the flour and gently tap off excess. Dip in the egg wash and then coat with the bread crumbs. Allow them to rest for 5 minutes so the crust can set. Very carefully drop into the oil and fry until golden brown. Remove to a baking sheet fitted with a rack and rest for 2 minutes before serving. Yield: varies according to amount of leftovers
