Indian Fried Eggplant

1 medium eggplant
1 teaspoon baking powder
1 teaspoon turmeric
1 cup milk
1/4 cup oil
1 cup flour
1 teaspoon salt
2 teaspoons curry powder

Wash eggplant and cut into 1/4" slices. Beat rest of ingredients til smooth. Heat oil (1" deep) to 375¼F in large skillet. Dip eggplant slices into batter, letting excess drip into bowl. Fry in hot oil until golden brown, turning once. Drain. Salt to taste. To keep warm and crisp, place in 200¼F oven until ready to serve.
