1 can salmon
1/2 c. sifted flour
1 egg
1 tsp. baking powder Recipe
Drain liquid from salmon into measuring cup. Place fish in mixing bowl and flake with fork. Add egg to fish. Mix well with fork. Add sifted flour and mix again. This will be a thick mixture. At this time, you may add salt and pepper if desired. Using 1/4 cup of liquid from salmon (throw rest away), add the baking powder and beat with fork until this reaches the 3/4 cup mark. Pour this into the fish mixture and mix well. This will be a little thin, but this is the secret. Using 2 teaspoons, scoop mixture out with one and push mixture into deep fryer 1/2 full of hot oil with the other one. These will float on top of oil and turn themselves over to cook on the other side. Don't mix ahead. Must be cooked within 15 minutes or baking powder will not perform its magic! Onion or garlic may be added if desired.
