Baked Cheese Enchiladas

Recipe Introduction
"This is a quick lunch that leaves you licking your lips. The green pepper adds crunch, there is lots of cheese for flavor and the salsa nips it up as much as you like."
List of Ingredients
1/2 cup chopped green pepper
1/2 cup Cheddar cheese
1/2 cup Monterey Jack cheese
1/2 cup American Cheese
4 flour tortillas, 8" in diameter
2 cups salsa, divided
melted butter
Sour cream, as a garnish
Chopped fresh cilantro, as a garnishRecipe
Sprinkle an equal portion of chopped green pepper, Cheddar cheese and Monterey jack cheese down the center of each tortilla. Roll each tortilla up. Spread 1/2 cup of salsa in a shallow baking dish. Place the tortillas on the salsa, seam side down. Brush each with a little melted butter. Top with the rest of the salsa. Place on the 1" rack. InfraCook on HI for 8 minutes or until cheese has melted. Sprinkle with additional cheese, if desired. Serve with sour cram and chopped cilantro.
