Baked Scallops

List of Ingredients
1-pound bay or sea scallops
1-tablespoon fresh lemon juice
Salt and pepper, to taste
2 tablespoons melted butter, divided
1/3-cup whipping cream
1/4-cup fresh breadcrumbsRecipe
Leave bay scallops whole. If you are using the larger sea scallops, cut them into quarters. Peel the tough little white muscle from the scallops. Place them in a large bowl; add lemon juice and salt and pepper to taste. Toss to coat. Coat the bottom and sides of a 10" round pan with 1 tablespoon of the butter. Put the scallops with their liquid in the pan. Pour on the cream. Make fresh breadcrumbs by grating 1 slide of fresh, firm-textured bread on the large holes of a hand-held grater or in the blender or food processor. Sprinkle the scallops evenly with breadcrumbs. Dribble the remaining tablespoon of butter over the crumbs. Place pan on the 4" rack and InfraCook on HI for 6 to 7 minutes, or until scallops are opaque and crumbs are a light golden brown.
