Chicken Souvlaki

Chicken Souvlaki Marinade
1/2 cup olive oil
1/4 cup lemon juice (use real lemon if you can)
1/4 cup red wine
1/2 tspn minced garlic (I put more, 1 tbspn I luv garlic)
1 tbspn oregano
3 whole chicken breats cut into 1" squares
In a bowl mix up the marinade, add the chicken pieces, stir and let marinade for at least 3 hours. I usually marinade overnight. After marination is complete thread the chicken pieces onto wooden skewers and you're ready to cook.
I have not yet cooked these fresh on the Flavor Wave oven (only frozen). So for frozen skewers I would suggest to cook between 15 and 18 minutes (turning over partway through cooking time).
I usually multiply the recipe several times, buy lots of fresh boneless/skinless chicken breasts from costco and make a big batch. After marination and putting them on the skewers I put them into FoodSaver bags and freeze (2 or 3 per bag). Being careful to keep space between each skewer when freezing so they don't stick together will make it easier when you go to remove them and cook them in your oven.

For the Sandwich:
- 1/2 to 1 skewer per sandwhich
- pita bread
- tzaziki*
- vietnamese chili garlic hot sauce*
- lettuce, torn into bite size pieces
- red onion, chopped
- tomato, chopped
1. Cook the chicken according to directions in the Flavor Wave oven.
2. Warm the pita bread in the FW oven for about 2 minutes at power 7.
3. Make the dressing for the sandwhich. This is done by mixing a very small amount of the chili garlic sauce in with the tzaziki (use a bowl). The idea here is to not necessarily make the dressing hot, but the chili sauce has such a great flavor when mixed with the tzaziki. If you like your sandwhich more spicy you can add more or add extra chili sauce directly to the sandwhich.
4. Place the pita bread on a dinner plate and spoon some of the dressing down the center of the pita.
5. Add chicken, onions, tomatoe, lettuce on top of the dressing.
6. add some more dressing on top of the lettuce (optional).
7. Fold the pita and eat!
Special Notes:

*Tzaziki - The tzaziki that I buy at costco from "Skotidkakis Goat Farm" is the best I've ever tasted. It's made in Canada, so I'm not sure if the U.S. costco stores have this as well.
*hot sauce - I use the Vietnamese chili garlic hot sauce from Huy Fong Foods. This is the kind that is normally sold in a transparent plastic jar with a flat green lid. It is not a smooth sauce, it looks kind of like a fine salsa you can even see whole seeds from the chili peppers in it.Recipe
