    Cornish Hens with Tarragon

    "This flavor combination of butter, garlic, and made rich and port and tarragon is utterly delicious."

    List of Ingredients




    2 Cornish hens split lengthwise
    Salt and pepper, to taste
    Garlic salt
    2 tablespoons butter
    1/2-cup white port wine
    2 cloves garlic, minced
    1 1/2 teaspoons dried tarragon

    Recipe



    Sprinkle hens with salt and pepper, then with garlic salt. Place them in the liner pan. In small saucepan combine butter, port wine, garlic and tarragon and heat until the butter melts. Pour mixture over the hens and turn them a couple times to coat all sides. Finish with the hens skin-side-down. InfraCook on HI for 15 minutes. Turn the hens and InfraCook for 20 minutes more or until hens are done. (Check the thighs near the body). To serve, spoon a little of the pan juices over each.
    Yield: 4 servings
