Recipe Introduction
"This takes time to marinate, but the actual work time is very little. This fish gives a blast of hot pepper through the lemon and garlic. Even without the peppers it's delicious, so give it a try."
List of Ingredients
1/4 cup minced onion
2 cloves garlic, crushed
4 tablespoons lemon juice
4 tablespoons vegetable oil
Salt and pepper to taste
Crushed red pepper, to taste
4 halibut, swordfish or other fish steaks, about 1" thickRecipe
In a small bowl, combine onion, garlic, lemon juice, vegetable oil, salt, pepper and crushed red pepper, to taste. Stir to mix. Place all the ingredients in a large self-sealing plastic bag, add fish and turn the bag gently a few times to coat the fish well with the marinade. Place in the refrigerator for up to 8 hours, turning occasionally. Drain the fish and pat dry with paper towels (the fish will not brown if it is too wet). Place fish directly on the 4" rack and InfraCook on HI for 10 minutes or until opaque in the center and flesh is almost ready to flake (be careful not to overcook).
