    Lemon Garlic Baked Shrimp

    "Shrimp in a totally luxurious, buttery garlic sauce. Wonderful as a show-off first course for company meals, or deliciously satisfying as a main course."

    List of Ingredients




    6 tablespoons butter, divided
    6 tablespoons flour, divided
    Pepper, to taste
    1 1/8-teaspoon salt, divided
    1-cup hot water
    1/2 teaspoon lemon juice
    1 tablespoon minced garlic
    1/4 cup minced parsley
    1/4-cup olive oil
    2 pounds medium, large or jumbo raw shrimp, peeled and deveined

    Recipe



    In a small saucepan melt 2 tablespoons of the butter. Add 2 tablespoons of the flour, pepper and 1/8 teaspoon of the salt and cook and stir over medium heat for 1 minute or until bubbly and smooth. Stir in water, and cook and stir for 1 to 2 minutes or until sauce is thickened. Remove from heat and add lemon juice, garlic and parsley. In a 10" round pan, place olive oil and the remaining 4 tablespoons butter.

    Place in the oven on the 4" rack and InfraCook in HI until the butter is melted and bubbly, 1 to 2 minutes. While the butter melts, pat shrimp dry with paper towels, and dust with a mixture of the remaining 4 tablespoons of flour and 1-teaspoon salt. When the butter has melted, place shrimp in the pan, turning to coat on all sides. InfraCook on HI for 2 to 3 minutes or until shrimp are pink and opaque. Pour the sauce over the shrimp and stir to coat them completely with sauce. InfraCook on HI to heat the sauce, about 1 minute.

    Yield: 6 main course servings or 12 first course servings
