Recipe Introduction
"The joy of cheesecake without all the work. These are tiny, one-bite bits of heaven. There is no crust to make because you just pop a wafer in the muffin cup."
List of Ingredients
12 aluminum-baking cups for cupcakes, 2 1/2" in diameter
12 vanilla wafers
8 ounces cream cheese, softened
6 tablespoons sugar
1 egg
1/2-teaspoon vanilla
Cherry or blueberry pie filling, as a toppingRecipe
Arrange aluminum baking cups on the 4" rack. Put one vanilla wafer in the bottom of each cup. In a medium bowl, using a hand mixer beat softened cream cheese. Add sugar, egg and vanilla until well combined. Fill cups 2/3 full. Place on the 1" rack. InfraCook on Power Level 5 for 13 to 14 minutes, or until done. Remove from the oven and cool completely. Refrigerate until serving time. To serve, top each little cake with pie filling.
