Recipe Introduction
"The sweet, tangy marinade forms a paper-thin, shell-like crust that is a delight to bite into and brings out the rich sweetness of the salmon."
List of Ingredients
1/3-cup soy sauce
1/3 cup orange juice
3 tablespoons sugar
1-teaspoon ground ginger
1-teaspoon garlic powder
2 scallions, chopped
1 1/2 pounds salmon fillet cut in 4 piecesRecipe
In a small bowl, combine soy sauce, orange juice, sugar, ginger, garlic powder, and chopped scallion. Pour marinade into a large self-sealing plastic bag. Add the salmon, seal the bag and turn it a few times to coat all surfaces of the fish. Refrigerate for 15 to 30minuters, turning the bag once or twice. Remove the salmon from the marinade, reserving the liquid. Lay the salmon skin-side-down directly on the 4" rack and InfraCook for 10 minutes or until done. Halfway through cooking time, brush with the reserved marinade. Place remaining marinade in a small saucepan and boil for 2 minutes to kill any microbes. Add any juices from the drip pan. Spoon a little marinade over each serving.
