Roast Prime Rib w/ Horseradish Sauce

List of Ingredients
1 standing beef rib roast, about 4 pounds
1 1/2 teaspoons salt
1-teaspoon lemon-pepper seasoning
1/2 teaspoon crushed dried thyme or rosemary
Horseradish Sauce:
1-cup sour cream
1/4 cup horseradish, drained well
2 teaspoons rice vinegar
Salt, to taste
1/2 to 1 teaspoon sugarRecipe
Using a sharp knife, trim the beef roast of any excess fat, leaving only a very thin layer. Rub the surface of the meat with salt, lemon-pepper and thyme or rosemary. Place bone side down on the 1" rack. InfraCook on Power Level 5 for 80 to 90 minutes, or until a meat thermometer registers 130¡ for a medium rare center.
Remove from the oven to a carving board, cover it loosely with foil and let the meat stand for 15 minutes to absorb its juices back to the center. During this time its temperature will rise another 5 degrees. While the meat cooks, in a small bowl combine the sour cream, horseradish, vinegar, salt to taste and 1/2 to 1 teaspoon of sugar. Taste as you add. Slice the meat and serve with the horseradish sauce as an accompaniment.
