    "Classic roasted chicken is always a treat, even for a dinner party. You'll make this one again and again."

    List of Ingredients




    1 roasting chicken, about 4 pounds
    Coarse salt (Kosher), to taste
    1 clove garlic, peeled
    Juice of 1 lemon
    Freshly ground black pepper, to taste

    Recipe



    Sprinkle the inside of the chicken with lots of salt. Then rub the inside with the garlic clove using up as much as you can. Sprinkle the outside of the chicken with salt and rub it all over with the rest of the garlic. Fold the wing tips under the body. You can tie the legs together, if desired. Sprinkle with freshly ground pepper. Place the chicken, breast side down, directly on the 1" rack and InfraCook on HI for 30 minutes. Turn breast side up and InfraCook for another 30 minutes, or until the thigh meat near the body is no longer pink and juices run clear when poked with a fork. Allow the chicken to sit for 5 to 10 minutes before carving so the juices can absorb back into the center of the meat.
    Yield: 4 servings
