Juice of 1 lemon
2 tablespoons vegetable oil
1-teaspoon salt
1/4-teaspoon pepper
2 1/2 tablespoons rosemary
3 pounds chicken piecesRecipe
Mix lemon juice, oil, salt, pepper and rosemary. Remove excess fat from chicken pieces, and the skin if desired. Coat chicken pieces with the seasoning mixture and place them skin-side-down in a shallow pan large enough to hold them in one layer. Place pan on the 4" rack and InfraCook on HI until golden, about 20 minutes. Turn skin side up. Sprinkle with salt and pepper. InfraCook 20 minutes more, or until nicely browned and the juice runs clear when poked with a fork.
