6 tablespoons butter
2 tablespoons minced onion
1 clove garlic, minced
1-tablespoon curry powder
1 tablespoon powdered ginger
1-tablespoon chili sauce
1 tomato peeled, seeded, chopped coarsely
1-tablespoon soy sauce
1-teaspoon sugar
2 tablespoons flour
1-cup chicken broth
1 teaspoon meat extract such as Bovrila or Kitchen Bouqueta
4 beef steaks, about 1" thickRecipe
In a small, heavy saucepan heat the butter. Then add onion and garlic and saute for 1 minute. Add curry powder, ginger, chili sauce, chopped tomato, soy sauce and sugar. Mix well. Stir in flour, broth and meat extract. Cook for two minutes and set aside. Salt and pepper the steaks on both sides and place the, directly on the 4" rack. InfraCook on HI, turning once, about 18 minutes for up to 1" thickness; for 1 1/2" to 2" thickness: 12 (rare), 14 (medium), or until done to taste. Use a small sharp knife to test. Serve the steak with the Southeast Asian sauce.
