    Spinach Balls with Mustard Sauce

    "Popeye would approve of these. So does everyone, even people who think they might not like spinach!"

    List of Ingredients




    Mustard Sauce:
    1/2-cup mayonnaise
    2 tablespoons Dijon mustard
    1-tablespoon sugar
    2 tablespoons chopped fresh dill or 2 teaspoons dried dill weed

    Spinach Balls:
    1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
    1/2 cup crushed herb stuffing mix
    1/2 cup firmly packed freshly grated Parmesan cheese
    1/4-cup butter, melted
    2 small green onions, finely chopped - use both green and white parts
    2 eggs dash of nutmeg
    1/4 teaspoon seasoned salt

    Recipe



    In a small bowl, combine the mayonnaise, mustard, sugar and dill. Set aside. In a large bowl combine the spinach, stuffing mix, Parmesan cheese, melted butter, green onion, eggs, nutmeg and seasoned salt. Mix well and shape into 1" balls. Place them in a shallow pan on the 4" rack. Infracook on Power Level 7 for 8 to 9 minutes or until lightly browned. Serve hot with Mustard Sauce.
    Yield: 12 servings
