Steaks with Blue Cheese Sauce

List of Ingredients
4 rib eye steaks, at lest 1" thick
6 tablespoons tawny port
6 ounces saga blue cheese, crumbled
2 tablespoons whipping creamRecipe
Salt and pepper the steaks on both sides and place them on the 4" rack. InfraCook on HI, turning once, about 18 minutes for one-inch thickness; for 1 1/2" to 2" thickness: 12 minutes for rare, 14 for medium, or until done to your liking. Use a small sharp knife to test. While the steaks cook, in a small saucepan bring the port to a boil. Turn heat to low and add the blue cheese cubes. Stir until the cheese melts and the sauce begins to thicken. Remove from heat, whisk in the cream and reheat gently. Serve immediately over the steaks.
Note: you can substitute Gorgonzola, Roquefort, Stilton or any blue cheese-just make sure it is not too tangy.
