    "When you cut into this sweet, juicy chop, feta oozes onto your fork. Add a little sweet salsa and you've got a bit of heaven. Elegant enough for a show off party, easy enough for a family treat."

    List of Ingredients




    4 pork loin chops, about 1" thick
    1/2 cup golden sherry
    2 tablespoons lemon juice
    6 tablespoons feta cheese
    Seasoned salt, to taste
    Pepper, to taste
    Paprika, to taste

    Mango Salsa:
    1 1/2 cups diced mango
    1/3 cup diced red pepper
    2 tablespoons diced red onion
    1-tablespoon fresh limejuice
    1/2-tablespoon rice wine vinegar
    1 tablespoon minced fresh mint
    1/4-teaspoon salt

    Recipe



    Cut a horizontal slit in each chop cutting from the meaty edge toward the bone. Widen the slit near the bone to make a pocket. Place the chops in a large self-sealing plastic bag. Add sherry and lemon juice. Close and turn to coat the meat. Place in the refrigerator for 30 minutes or more. Remove chops from the marinade. Pat hops dry with paper towel. Stuff 1 1.2 tablespoons feta cheese in the pocket of each chop.

    Place chops directly on the 4" rack. Sprinkle with seasoned salt, pepper, and paprika to taste. InfraCook on HI for 7 minutes. Turn season again. InfraCook for 6 or 7 more minutes. (To test for doneness, cut into the meat near the bone; the color should be only faintly pink.) To make the Mango Salsa: In a small bowl mix all ingredients. Chill. To serve, spoon 1/4 cup of Mango Salsa over each chop and place the rest in a bowl to pass at table.
    Yield: 4 servings
