Beef & Horseradish Fondue

1 1/4 lbs sirloin or rump steak
1-2 tsp grated or creamed horseradish
4 TBS olive oil
2 TBS red wine vinegar
Salt and freshly ground black pepper
1 pt. oil, for frying
To Garnish:
Flat-leaf parsley

Trim and cut steak into strips and place into shallow dish. Mix together horseradish, oil, vinegar, and seasoning, then pour over beef. Stir, cover lightly and marinate for at least 30 mins in fridge. Stir occasionally during this time.
Heat oil (or broth) in fondue pot to 375 then carefully place over the lit burner. Drain beef and spear onto fondue forks. Cok in hot oil for 2 to 4 mins or according to personal tast. Garnish with parsley, serve with sauce, salads and bread.
