Sweet: Espresso Fondue

List of Ingredients
1/2 cup water
1/4 cup plus 2 Tbsp. heavy cream
5 tsp.of your favorite instant espresso powder
2 Tbsp.confectioners sugar, add more to taste
12 oz. good quality bitter sweet chocolate, finely chopped
2 Tbsp. brandy
Recipe
In a medium saucepan, bring the water and cream to a boil over high heat.
Remove from the heat and stir in the espresso powder and 2 tablespoons confectioners sugar until dissolved.
Add the chocolate and let stand until softened, about 3 minutes. Add the brandy and whisk until smooth. Taste, and add additional sugar as needed.
Transfer to a ceramic fondue pot and keep warm over a burner. Serve immediately with the dipping ingredients.
