Southwestern Green Chili, Spinach & Brie Cheese Fondue

List of Ingredients
8 oz. brie cheese cut into small pieces
3 oz. of sharp cheddar cheese cut into small pieces
7 oz. smoked gouda cheese cut into small pieces
1-4 oz. can well-drained green chili finely chopped,squeeze out extra juice
1/2 tsp. cracked black pepper
1/4 tsp. chili flakes
1/4 onion finely minced in a food processor
1 tsp. ground cumin
1 tsp. chili powder
2 bay leaves
1/4 cup heavy cream
Recipe
In a double boiler, over boiling water, melt together above ingredients, stirring occasionally.
1 bunch spinach
1 tsp. oil
1/2 cup Portuguese sausage, finely diced
In a sauté pan, cook spinach in oil and drain well. In a separate pan, cook sausage and drain well. Break apart cooked spinach, by hand, then add both spinach and portuguese sausage, to the melted cheese fondue. Once mixture is well blended, transfer to a fondue pot. Keep warm in a fondue pot or over a double boiler and serve warm. Garnish with fresh cilantro, green onions, diced avocado and/or a chunky salsa.
Serve with tortilla chip, french bread, tomato wedges, onion slices or cherry tomatoes.
