Stewed Chicken w/ Orzo & Veggies

1/4 cup olive oil
6 chicken breast halves, each halved
2 onion, minced
3 cloves garlic, crushed
3 carrots, sliced
1/2 cup chopped fresh parsley
1 1/2 cups orzo
4 cups chicken broth
1/3 cup tomato sauce
1 1/4 teaspoons salt
1/4 teaspoon red pepper flakes
2 teaspoons dried basil
1 teaspoon dried oregano
1 cup frozen green peas
1/4 cup grated Parmesan cheeseRecipe
In a pressure cooker, heat oil. Add chicken and saute in hot oil, lightly browning on both sides. Set aside and reserve. Add onions, garlic, carrots and parsley and saute in hot oil 2 minutes, stirring frequently and scraping bottom of cooker. Stir in orzo and cook 1 minute. Add broth, tomato sauce, salt, pepper flakes, basil and oregano. Stir well. Place chicken over orzo mixture. Secure lid. Over high heat, develop steam to high pressure. Reduce heat to maintain pressure and cook 10 minutes. Release pressure and remove lid. Add peas to pan, mix well, and cook over medium heat 2 minutes, stirring frequently. Transfer chicken and orzo to a platter and sprinkle with cheese. Serves 6
