1 cup chicken stock
1 cup ketchup
1/2 cup cider vinegar
2 tablespoons rendered bacon fat or lard
1 to 2 tbl favorite hot sauce
1 teaspoon liquid Barbecue Smoke®
coarse salt and ground black pepper Recipe
Combine the broth, ketchup, vinegar, bacon fat, hot sauce and liquid smoke, if using, with 1/2 cup of water in a large heavy nonreactive pot. Slowly bring to a boil over medium heat. Reduce the heat to medium heat. Reduce the heat to medium-low and let the sauce simmer gently until richly flavored and slightly reduced, about 30 minutes, stirring from time to time to prevent scorching. TAste for seasoning, adding salt and pepper. Let cool to room temperature, then refrigerate, coveered, until serving. the sauce will keep for 3 days. Bring to room temp. or warm before using.
