List of Ingredients
1/2 cup coarse salt (kosher or sea)
1/2 cup sugar
1/2 cup fresh ground black pepper
1/2 cup sweet paprika Recipe
Place all in bowl and stir to mix. Store in airtight jar away from heat or light -- keeps for at least 6 months. Makes 2 cups.Use 1-2 tbl. per pound of meat. You can grill or smoke meat as soon as you have sprinkled the rub on, or you can let the seasoned meat cure in the fridge for four to twenty-four hurs, which will give you a stronger flavor.
Variation: to make a bbq butter for basting, melt a half a stick of unsalted butter (1/4 cup) and stir 1 tbl. of rub into it.
