    Plum Based BBQ Sauce

    This makes a "medium" sauce, one that has some chili flavor, but not tons. For a hotter sauce, add 1/2 tsp cayenne along with the mustard.

    List of Ingredients




    3/4 cup Chinese plum sauce (Koon Chun brand)
    1 1/2 teaspoons dry mustard
    1/2 teaspoon cayenne
    1/2 bottle beer

    Recipe



    Combine all in skillet or saucepan. Bring to a boil, reduce the heat, and simmer until slightly thickened. If large pieces of fruit remain, strain them before using this as a basting sauce. Makes 1 1/4 cups, or enough for a 3 pound slab of spareribs. For variation, substitute bottled hoisin sauce for the plum sauce, and use at least 1/4 tsp. cayenne. This sauce will not need straining.
