    2 cups cider vinegar, or more to taste
    1/4 cup honey, or more to taste
    1/4 cup molasses
    1/4 cup worcestershire sauce
    1 tablespoon your favorite hot sauce
    1 tablespoon coarse salt (kosher or sea) or more
    1 teaspoon fresh ground black pepper

    Combine the vinegar, honey, molasses, worcestershire, hot sauce, salt and pepper with 1 cup of water in a nonreactive saucepan over medium heat. Bring the sauce to a simmer and let simmer gently until the flavors are blended, about 5 minutes. (Do not let the sauce come to a full boil). Remove the sauce from the heat and let cool to room temperature. Taste for seasoning, adding more vinegar, honey, and/or salt as needed.

    This is a very intense sauce, so use sparingly. Makes about 3 cups. The sauce will keep for several weeks in a glass jar stored away from heat and light. Place a piece of plastic wrap under the jar lid to keep it from corroding.

    Designed to accompany pork.
