Smoky Honey Mustard BBQ Sauce

1 tablespoon salted butter
1 slice bacon, cut into 1/4" slivers
1 medium onion, finely chopped
1 to 2 jalapeno peppers, seeded, fine chopped
(can leave seeds in for hotter sauce)
2/3 cup grainy mustard (preferably Meaux)
2/3 cup honey
1/2 cup cider vinegar
1/4 cup brewed coffee
coarse salt (kosher or salt)
fresh ground black pepper Recipe
Melt butter in heavy nonreactive saucepan over medium heat. Add the bacon and cook, stirring often, untilt he fat starts to render, about 3 minutes. Add the onion and jalapeno and cook until the bbacon is crisp and the onion is soft and translucent, 3-5 minutes. Stir in the mustard, honey, vinegar and coffee. Let the sauce simmer uncoverd until thick and richly flavored, 6-10 minutes. Season with salt and pepper to taste. Let the sauce cool to room temp. before serving.
If not serving immediately, transfer to clean glass jar. Pace a piece of plastic wrap between the jar and the lid to keep the lid from corroding. Will keep refrigerated for at least 1 week. Bring to room temp before serving. Makes 2 cups.
