Tomato Based BBQ Sauce

2 tablespoons oil
1 large onion, chopped
3 large clov garlic, peel and smash
2 tablespoons chopped fresh ginger
2 pounds ripe tomatoes, rough chopped or 28 ounces crushed tomatoes w/ puree
1 teaspoon dried oregano, crumbled
4 California dried chilies, seeded and torn -- into pieces
1 cup cider or red wine vinegar
1/4 cup honey or brown sugar
2 tablespoons soy sauce
seeds from 3 cardamom pods
5 cloves
1 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1 1 inch piece cinnamon stick, crumbled

Heat oil in saucepan and gently saute the onion, garlic and ginger until onion is translucent. Add the tomatoes, oregano, chili pieces, vinegar, honey and soy sauce. Grind the whole spices to a powder in a spice grinder or mortar and add them to the sauce. Simmer for 2 hours or more, stirring often to prevent sticking, until the sauce thickens. Strain the sauce through a fine food mill or sieve. Use immediately, refrigerate, or pack into sterilized jars for future use. Makes 1 quart, enough for 3-4 slabs of ribs or 4-6 chickens. For hotter sauce, taste halfway through cooking and add cayenne to taste, beginning with 1/4 tsp and letting sauce cook a few minutes before tasting.
