White Lightening Rib Glaze

List of Ingredients
1 cup firmly packed dark brown sugar
1/2 cup whiskey
1/4 cup ketchup
4 tablespoons unsalted butter, cut into 1/2" pieces
2 tablespoons soy sauce
2 tablespoons fresh lemon juice
1 teaspoon grated fresh lemon zest
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper Recipe
Place all ingredients into a heavy nonreactive saucepan ver high heat and bring to a boil. Reduce the heat to medium hgh and let simmer briskly until the glaze is thick and flavorful, about 5 minutes. If not using the glaze rigyht away, transfer it to an airtight jar and store it in the fridge for up to 2 weeks. you'll need to reheat it in a nonreactive saucpean to melt the butter before using.
Designed for ribs, it also makes a great topping for grilled chicken, pork roasts and chops, ham steaks, and even dark rich fish like salmon or bluefish. Brush it on during thelast 5 or so minutes of cooking for a handsome sheen and a potent blast of flavor.
