Fish/Seafood: Albacore Tuna w/ Gingered Marinade

Recipe Introduction
"The Gingered Marinade makes fresh albacore tuna taste like it's been prepared in Hawaii. Serve this with fresh pineapple slices and pretend for just a moment that you can hear those tropical waves crashing on the shore."
List of Ingredients
1/4 cup fresh orange juice
1/4 cup extra virgin olive oil
1/4 cup light soy sauce, (or Tamari)
1/4 cup green onions, chopped
1 tablespoon ginger, minced
1 teaspoon garlic, minced
1/4 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
1 - 1 1/2 pounds tuna steak, albacore
Dash canola oil, for the grid, if using a grill
Recipe
To make the marinade, combine all the ingredients in a medium shallow dish. Add the tuna. Marinate in the refrigerator for 2 to 6 hours. Let sit at room temperature for 30 minutes before grilling.
Prepare the grill or electric grilling machine for cooking.
If using a charcoal grill, oil the grid and place it above ashen coals. Place the tuna directly above the heat and cook for about 10 minutes per inch of thickness, or until the center is opaque. Baste and turn once after 5 minutes.
If using an electric grilling machine, place the fish on a hot grill, drizzle a bit of the marinade over the top, and cook for 3 1/2 to 4 minutes, or until the fish is opaque in the center of the thickest part.
