Lamb: Barbecued Butterflied Lamb

3 tablespoons vegetable oil
2 cloves garlic
1/4 cup soy sauce
3/4 cup pineapple juice
1/4 cup sherry, optional
1 tablespoon brown sugar
6 pounds butterflied leg of lamb
orange twists & mint leaves (garnish)
Recipe
Combine first six ingredients and marinate lamb for up to 24 hours. Grill meat about 20 minutes per side for medium doneness. Garnish with orange twists and mint leaves. Serve with mint sauce and/or chutneyh if desired. Yield: 12 servings.
