Fish/Seafood: Barbecued Tuna & Lemon Butter

3 lb tuna steaks -- *See note
6 slices bacon
1/2 cup butter
1 clove garlic -- minced
1/4 cup lemon juice
2 tablespoons fresh parsley -- minced
Recipe
*NOTE: Substitute Shark, Marlin or Swordfish. Wrap 1 strip of bacon around the circumference of each steak and secure with a toothpick. Melt butter, stir in garlic, lemon juice and parsley. Set aside. Grease grates of a preheated grill and place steaks about 6 inches above the coals. Brush with lemon butter, baste and cook. Turn only once and baste several times until fish becomes opaque. Allow 10 minutes per inch of thickness. 5 minutes per side for a 1-inch steak. May also be done in a broiler. Serves 6.
