"This recipe produces some of the most tender, tasty, yummy chicken you will ever have. Patience is the name of this game. Make this chicken on a day when you have about four hours to spare. I suggest you load up your grill too. Don't just make one measly chicken, make three or four!"
Rub:
1 tblsp black pepper
1 tblsp salt
1 tsp onion powder
1 tsp garlic powder
At least 1 Chicken; skin-on; giblets and organs removed (and saved for some other yummy sauce)
1 can of Lone Star Beer. Other beer will do, but this gives it that TX feel ;)
16 OZ. can works best but 12 OZ will work too.
Recipe
Get charcoal started in BBQ. Try to offset the charcoal to one side. Mix rub ingredients together in small bowl. Open full can of beer and set aside. Place chicken on cutting board as if it were sitting up. Place beer next to chicken on cutting board. Introduce the two :) lift up chicken and place on top of can.
Force chicken on the open can of beer until the beer is halfway in the lower cavity of the bird. Apply the rub mixture generously to the bird. Be sure to keep the bird/can upright and place in the BBQ on the opposite side of the charcoal. Cook covered with open vent for about 3 hours. The meat should be just about falling off of the bone. The beer inside will help keep it moist through evaporation. Watch out for the can, it'll be incredibly hot!!
