Duck: Grilled Duck with Citrus Honey Salsa

1 lemon
1 seedless orange
1/2 pink grapefruit
3 tablespoons chopped cilantro
1 teaspoon minced jalapeno pepper
1 tablespoon honey
1/4 teaspoon salt
1 pound boneless duck breast halves, 4 total skinned
2 teaspoons extra virgin olive oil
1/2 teaspoon ground coriander
Recipe
Grate 1 tsp. of peel from the lemon and 2 tsp. from the orange. Squeeze 2 teaspoons of juice from the lemon. Place the peels and juice in a medium bowl. Peel and section the orange and the grapefruit, taking care to discard all of the white pith. Add the fruit sections, onion, cilantro, jalapeno, honey and salt to the mixing bowl. Stir to blend well. Let stand for 30 minutes at room temperature, or refrigerate from 1-6 hours. Return to room temperature before serving. Prepare a medium hot barbecue fire or preheat a gas grill. Rub the duck with the oil, then sprinkle with coriander and salt and pepper to taste. Grill the duck, turning once, until no longer pink, a total of 8-10 minutes. Serve the duck with the salsa spooned over the top. Serves 4.
