Fish/Seafood: Grilled Monkfish

List of Ingredients
1 pound monkfish, fillet or medallion -- clean and trim
1 lemon, half juiced, half cut into thin -- wedges
1 spray margarine
crab seasoning and pepper to taste
1 large or 2 small bay leaves
1 spray oil for the grill
Recipe
Spray your grill with spray oil and heat it up (you can also cook this under the broiler). Clean monkfish of any gray membrane. Season with lemon and spices. Spray with margarine. Cook on grill for about 3-5 minutes depending on thickness. Spray with more margarine and then turn and cook another 3-5 minutes until done. The flesh should turn completely white. Do not overcook. Serve with lemon wedges.
Serving Suggestions: This fish goes well with most side dishes such as rice pilaf, couscous, baked potato, mashed potato, etc. I don't recommend a spicy side dish as the delicate and subtle flavor of the monkfish would be lost. I like a green salad or green beans with this and some nice crusty bread. Monkfish is good substitute for lobster tail in any recipe.
