Steak: Grilled Sirloin Steaks w/ Blue Cheese Walnut Relish

6 ounces Roquefort cheese, crumbled
3 tablespoons chopped walnuts
3 tablespoons chopped green onions
2 tablespoons chopped flat leaf parsley
1 1/2 teaspoons grated lemon rind
2 1/2 lbs. Angus boneless strip or sirloin steaks cut 1/2-3/4" thick (2 1/2 to 3 lbs)
1 1/2 teaspoons dried thyme leaves
2 1/4 teaspoons salt
2 1/4 teaspoons freshly ground black pepper
Recipe
Place cheese, walnuts, green onion, parsley and lemon zest in a bowl and mix well; set aside. Place meat on a work surface. Combine thyme, salt and pepper in small bowl and mix well. Rub both sides of meat with mixture and set aside. When ready to cook steaks, arrange a rack 5" from heat source, spray rack with cooking spray and preheat grill. Grill steaks until medium-rare, about 3-5 minutes per sides. Alternatively, broil steaks 4-5 inches from heat for 3-5 minutes per side. Remove and arrange steaks on warm serving plate. Cut steaks into 6 serving portions and top each with generous tablespoon or more of relish. Serves 6.
