6 soft shell crab
1/2 cup extra virgin olive oil
1/4 cup white wine
1/4 cup fresh lemon juice
2 tablespoons minced basil
2 teaspoons minced capers
2 tablespoons minced parsley
1/4 teaspoon minced garlic
Recipe
Clean crabs ; season with pepper and salt. In bowl, mix oil, wine, lemon juice, basil, parsley, capers and garlic; brush lightly on crabs. Grill crabs 3 minutes on each side, basting occasionally. Spoon one tablespoon sauce over each crab when served. (Recipe makes enough sauce for two batches. Remainder will keep, refrigerated, for up to three weeks.) Makes two to three servings.
