Steak: Grilled Steak with Roasted Garlic Sauce

1 large garlic bulb
1/3 cup sour cream
1/4 cup fresh parsley
1 tablespoon dry sherry -- or beef broth
1/4 teaspoon salt
1/8 teaspoon pepper
2 pounds t-bone steaks -- trimmed -- (4-8oz.
steaks)
Recipe
Prepare Roasted Garlic Sauce. Heat oven to 500ºF. Cut 1/4 inch slice from top of garlic bulb to expose cloves. Carefully remove most of the paperlike skin, leaving the bulb intact and the cloves unpeeled. Wrap garlic in aluminum foil. Bake garlic about 30 minutes or until soft; Cool slightly. Separate garlic cloves and press slightly to squeeze garlic out; discard skin. Mix garlic , sour cream, parsley, sherry and salt and pepper in 1-quart saucepan. Cook over low heat about 5 minutes stirring constantly until heated through. Cover and grill beef 4 to 5 inches from coals about 10 minutes for medium rare turning once. Sprinkle with salt and pepper. Serve beef with sauce.
