1/4 cup lemon juice
1 tablespoon vegetable oil
1/4 cup chopped fresh basil leaves
2 tablespoons grated fat-free parmesan cheese
2 garlic cloves -- finely chopped
1/8 teaspoon black pepper
1 pound skinless boneless chicken breast halves
Recipe
Prepare charcoal or gas grill or preheat broiler. In small bowl, combine lemon juice, oil, basil, Parmesan, garlic and pepper; mix well. Reserve 1/4 cup. In shallow dish or plastic bag, pour remaining marinade over chicken. Cover; marinate in refrigerator 30 minutes to 1 hour. Remove chicken from marinade. Over medium-hot coals, grill or broil until tender, basting frequently with reserved marinade. Makes 4 servings.
