Turkey: Turkey Brochettes

List of Ingredients
1/3 cup olive oil
1/4 cup soy sauce
1/2 cup dry vermouth
juice of 1/2 lemon
1 1/2 tablespoons grated fresh ginger
2 cloves garlic, minced
2 teaspoons ground black pepper
1 fresh turkey breast half, skinless
and cut 2" cubes
Recipe
Mix the first 7 ingredients together in large bowl, whisking to blend. Add the cubed turkey meat and toss to coat evenly. Cover the bowl and marinate in the fridge for 4-6 hours. Remove the brochettes from the fridge half an hour before serving. Thread the turkey on large metal skewers. Pack them rather tightly together, as this helps them to keep from drying out. Grill over moderate charcoal fire for total of about 15 minutes, turning 3-4 times. Serve with dipping sauce. Serves 4.
