Turkey: Ginger Garlic Turkey w/ Mango Glaze

4 lb Honeysuckle White Fresh Whole Turkey (4 to 5) Breast or 2 split breasts
1 lime sliced 1/8 with peel
1 bulb garlic separated into cloves
1 tbl finely chopped fresh ginger root or 1 teaspoon ground ginger
1 tbl olive or vegetable oil
1/2 tsp salt
1/2 tsp coarsely ground pepper
Mango Glaze:
2 med ripe mango (2 cups) peeled cut into 1/4 pieces
1/2 cup fresh orange juice
1/4 cup cider vinegar
2 tsp grated lime peel
2 tbl fresh lime juice
1 tbl finely chopped fresh ginger root or 1 teaspoon ground ginger
1/3 cup chopped fresh cilantro or parsley
Recipe
Loosen skin around turkey breast. Tuck lime slices, garlic cloves and ginger root under the skin. Brush turkey with oil; sprinkle with salt and pepper. Grill over hot coals according to barbecue directions (1 1/2 to 2 hours).
Meanwhile, in medium saucepan combine all Mango Glaze ingredients (see below) except cilantro. Cook over medium heat, stirring occasionally, until sauce is thickened (20 to 25 minutes). Stir in cilantro.
Brush over turkey while grilling or serve with grilled turkey.
