Sweet and Sour Spiced Swedish Beans

1 pound dried Swedish brown beans or pink kidney beans
1/2 cup honey
1/2 cup packed light brown sugar
1/3 cup cider vinegar
3 tablespoons unsalted butter
2 teaspoons ground ginger
1/2 teaspoon salt

In a large pot, combine the beans and enough cold water to cover them by 2 inches. Bring to a boil over high heat and boil for 2 minutes. Remove the pot from the heat, cover, and let stand for 1 hour; drain well. (The beans can also be soaked overnight in a large bowl with enough water to cover by 2 inches, then drained.)
Return the beans to the pot and add enough fresh water to cover them by 2 inches. Bring to a boil over high heat, reduce the heat to low, and simmer, partially covered, until the beans are almost tender, about 1 hour. Add boiling water if needed to keep the beans covered with water during cooking. The time needed to cook the beans will vary according to the dryness of the beans.
Stir in the honey, brown sugar, vinegar, butter, ginger, salt and cinnamon stick. Continue cooking, uncovered, until the beans are completely tender and a thick sauce is formed, about 30 minutes. Add water if necessary during the cooking if the sauce becomes too thick. Or increase the heat to high to thicken the sauce if it seems too thin when the beans are tender. Serve the beans hot. Serves 8-10.
