2 1/2 cups prepared eggnog
1 envelope gelatin -- plus 1 teaspoon
2 tablespoons sugar
1/2 teaspoon rum extract
2 ounces semisweet chocolate -- coarsely chopped
2 teaspoons unsweetened cocoa powder -- sifted
1 1/2 teaspoons instant coffee powder
1 teaspoon vanilla
1 cup heavy cream
cinnamon sticks -- for garnishRecipe
Mix eggnog, gelatin and sugar in saucepan. Heat, stirring, over medium heat until gelatin dissolves. Remove 1 cup mixture to small bowl; add extract. Add chocolate, cocoa powder and coffee powder to saucepan. Cook over low heat, stirring, to melt chocolate. Add vanilla. Chill mixtures separately until they mound when stirred; don't overchill or they will become lumpy. Beat cream in bowl to stiff peaks. Fold a third into plain eggnog and remaining two thirds into chocolate mixture. 5. Spoon mixtures in alternating layers in 4- to 5-ounce glasses or cups. Cover; refrigerate until mixture is set, about 2 hours. Garnish with cinnamon sticks. Makes: 8 servings.
